Joss is a California transplant and current chef at noma. I’ve lived and traveled far and wide, aimlessly wandering to uncover the world’s cuisine and ingredients. Copenhagen has treated me with immaculate Danish design and the most scrumptious pastries, but there have been a few people that have made my experience unlike any other (Lan-xin being one of them).
Lan-xin is a Singaporean with Shandong, Fuzhou and Indonesian roots. Always the curious soul, Foo Ferments is the current way I choose to reconnect with a childhood dream of being a chef and rediscovering my heritage. It is a working fermentation lab where I get to play, experiment and have autonomy over the people I collaborate with. Happy was the day when Joss said yes to this latest expression of a shared Chinese heritage.
Think a celebration of fermentation in Chinese cuisine through the use of modern techniques rooted in ancient traditions and practices. Think welcome to Chinatown.
Another opportunity to gather with friends and family. Same warm and fuzzy feeling, different delicious things! Come be with us for the last day of the new year, also known as the second reunion dinner or the 元宵節/lantern festival. Growing up, our family would gather at nainai's (paternal Chinese grandma) house and celebrate the first full moon, eat 湯圓/tangyuan and hope for deeper and closer connection with each other through the year.
