Carrot Scrap Mirin

What started as a personal project becomes something I’m ready to share with others. A quest for better. Part science, part gut feeling.
Two plus year old mirin. Only three ingredients, as it should be. This one made with carrot scraps because the family loves carrot juice and I happened to be reading Koji Alchemy for the first time. 

Favourite ways to use: 

• Good quality mirin is meant for drinking as is either as an aperitif or digestif
• Mixed one to one with soy sauce and used as dipping sauce or glaze 
• In cooking where a touch of sweetness is lacking but you don't want to use sugar

Aged: 24 months

Ingredients: Danich carrots, rice, distilled rice liquor*
