Mirin

What started as a personal project becomes something I’m ready to share with others. A quest for better. Part science, part gut feeling.
Three plus year old mirin. Only two ingredients, as it should be.

Favourite ways to use: 

• Good quality mirin is meant for drinking as is either as an apéritif or digestif
• Mixed one to one with soy sauce and used as dipping sauce or glaze 
• In cooking where a touch of sweetness is lacking but you don't want to use sugar

Aged: 36 months

Ingredients: rice*, distilled rice liquor
